徳島 「吟月」 鳴門鯛の鍋

俗に「魚の王様」ともいわれるマダイ。その中でも潮流の速い鳴門海峡でもまれたマダイは一級品。「鳴門鯛」には、鳴門海峡の激しい潮流を泳ぐため、骨に「こぶ」を持つものもいると言われています。コリコリした歯ごたえの引き締まった身と適度な脂の乗りが、高い評価を得ています。
